1 lb. box orzo (rice shaped pasta)
3 T olive oil
1 red onion, finely diced
4 cloves garlic, minced
2 large zucchini, cubed
1 ear of corn
1/2 C parmigiano cheese, grated
Juice and zest of 1 lemon
Salt & Pepper
You could also add: grilled chicken or salmon, tomatoes, fresh herbs, anything really...
Cook orzo in salted water until tender, drain and set aside
Meanwhile, heat oil in large skillet, add garlic and onions and saute for a couple of minutes, then add in zucchini, then corn.
Combine vegetable mixture and orzo in your favorite serving bowl along with the lemon juice and zest. Add salt and pepper to taste. Serve with freshly grated cheese.
