Zucchini Orzo Salad

This recipe was originally from a friend, and I have tweaked and edited it over time. This is a favorite summer dish of mine because you can utilize whatever fresh vegetables you have and it will always taste delicious. It is good hot, cold or room temperature, which makes it perfect to bring to a cookout.

1 lb. box orzo (rice shaped pasta)
3 T olive oil
1 red onion, finely diced
4 cloves garlic, minced
2 large zucchini, cubed
1 ear of corn
1/2 C parmigiano cheese, grated
Juice and zest of 1 lemon
Salt & Pepper

You could also add: grilled chicken or salmon, tomatoes, fresh herbs, anything really...
Cook orzo in salted water until tender, drain and set aside

Meanwhile, heat oil in large skillet, add garlic and onions and saute for a couple of minutes, then add in zucchini, then corn.
Combine vegetable mixture and orzo in your favorite serving bowl along with the lemon juice and zest. Add salt and pepper to taste. Serve with freshly grated cheese.

  4. This looks so tasty! But I unfortunatly became dairy intolerant...:-( Yes yes dairy not only lactose, and that's no fun at all!

  5. G, you can omit the cheese, and maybe add in some fresh herbs for some extra flavor!
