Turkey Chili

This chili recipe is adapted from my friend Melanie's recipe for chili. This makes a huge batch but keeps well in the fridge for leftovers, and freezes perfectly. I generally freeze half of it.

2 28 ounce cans of crushed peeled tomatoes
1 can black beans, drained and rinsed
1 can red kidney beans, drained and rinsed
2 4 oz cans chopped green chiles
2 lbs ground turkey (can also use veggie crumbles or any combination of meat that you like)
1 green bell pepper, seeded and chopped
1 jalepeno, seeded and finely chopped
1 medium onion, chopped
3 cloves of garlic, minced
3/4 cup chopped celery
1 tablespoon olive oil
16 oz frozen corn (or canned or fresh)
1/2 teasoon cumin
4 tablespoons chili powder (or to your taste)
2 teaspoons oregano
black pepper & salt to taste

Heat olive oil in a large dutch oven over medium heat, saute onion with oregano and cumin until tender. Add celery, bell pepper, jalepeno, garlic and green chiles. Stir to combine and then add in ground turkey. Cook until no longer pink.

Add tomatoes to the pot with chili powder and beans, bring to a boil then reduce heat to a simmer for about 45 minutes, add corn and cover until heated through. Serve with your favorite bread.

Topping ideas: cheddar cheese (my favorite), avocado, sour cream or plain greek yogurt

Holiday Spirit

I cannot believe Thanksgiving has come and gone already! I hope everyone had a lovely holiday weekend, we had a great time seeings lots of friends and family and eating our weight in delicious-ness.

When we got home yesterday afternoon, we were ready to put up the Christmas tree and get into the the holiday spirit. I am Jewish and Greg is Christian, so Christmas is something still (fairly) new and exciting for me (especially the tree, it's so fun!), and I love decorating for the holiday.

Happy Thanksgiving!

With Thanksgiving tomorrow, I am spending the day in the kitchen making lots of different goodies to bring to the various Thanksgiving celebrations Greg and I will be at. This (long!) weekend will be full of friends, family and food.

Amid all of the stress and hectic-ness that holidays bring about, I want to stop for a minute and think about what a great holiday this is, one for coming together and giving thanks for all it is that we are blessed with. Such a beautiful sentiment that can sometimes get lost.

This year I have so much to be thankful for, but to name a few, I am thankful for my husband, my family and friends, having enough and enough to share, our lovely warm home, job security, books, living in a great city, my kitchen (including all the gadgets kept there) and my iphone. And I am thankful for all of you, those who read my blog and comment on it, it truly makes my day to see that people read what I put out there and respond to it. I started blogging this summer as a creative outlet and have really found it to be such a rewarding part of my day. Thank you.

What are you thankful for this year?

Etsy love: Carolina Cottage

I love etsy and having one of a kind things. Carolina Cottage is a great little shop that specializes in 'contemporary decoupage.' I have a set of the sheet music candle holders that are so beautiful and get tons of compliments. I am also loving the coasters, what a great way to immortalize a favorite song in your home (maybe your wedding song?)

What's on my nails: Essie Bobbing for Baubles

I ordered about 1/2 of the Essie Winter 2011 collection. The first color I tried is Bobbing for Baubles, which looks like navy with a hint of grey in the bottle, and came out very dark on my nails. The finish is really nice and shiny but it's not a color I can't live without.

Black rhinos moved to new home

I saw this amazing video on the news this morning and couldn't not share it with you all!

"A group of 19 critically endangered black rhinos have been moved from South Africa's Eastern Cape to a new range in the Limpopo province to encourage increased breeding and population growth.  The location is the seventh new habitat established by the WWF's Black Rhino Range Expansion Project."

Zesty Bagel Spice Chicken Wings

I am loving Bagel Spice! The friendly people there sent me a pack with their different varieties for me to try out, the Zesty flavor got my attention, it has all the same ingredients as the original Bagel Spice but with the additions of jalapeno flakes and sea salt. I thought it would be a great addition to chicken wings.

1/4 cup mayonnaise
a few shakes of hot sauce to (my favorite is the classic Frank's sauce)
1 1/2 tablespoons zesty bagel spice + more to sprinkle on before cooking
2 1/2 pounds of chicken wings (approx 20)

Mix together mayo, hot sauce and bagel spice in a large bowl. Add raw chicken wings to the bowl and toss to coat evenly. Let marinate overnight (giving them a toss at some point if you think of it to redistribute the marinade about halfway through)

Arrange wings on a broiler pan and shake a little more bagel spice over the wings, bake for about 45 minutes at 400, turning them halfway through (you could also throw these on the grill).

Serve with bleu cheese for dipping.

Cranberry Apple Crisp

This is a delicious (and super easy) fall dessert with a wonderful crispy, sweet topping. I may make this again for Thanksgiving.

5 medium apples, cored, peeled and sliced
2 cups fresh cranberries
1 cup granulated sugar
1/4 teaspoon salt
1 tablespoon fresh lemon juice
1/2 tablespoon vanilla extract

1 cup dark brown sugar, lightly packed
1 cup quick cook oats
1/2 cup all purpose flour
6 tablespoons butter, room temperature

Mix apples, cranberries, granulated sugar, salt, lemon juice and vanilla extract and put into a buttered baking dish, set aside.

Mix brown sugar, oats and flour, add butter one tablespoon at a time, mixing with a fork or pastry blender until well distributed and crumbly. Sprinkle topping evenly over the fruit.

Bake for 45 minutes at 325.

The Great Food Blogger Cookie Swap

I cannot believe Halloween is already past us and it's November! Judging by commercials and storefronts, it's time to start thinking about the holidays.

Lindsay of Love and Olive Oil and Julie of The Little Kitchen have come up with a genius idea to ring in the holiday season with: The Great Food Blogger Cookie Swap!

Each food blogger will bake 3 dozen cookies and send a dozen each to three other bloggers they are matched with by December 5. Then on December 12, everyone will post the cookie recipes on their blog. I am so excited for this and have been poring over my recipes to pick the perfect one to share with other bloggers.

The deadline to sign up is Friday, November 18, don't miss out!

Do you ever do holiday cookie swaps? What's your favorite holiday cookie?
