This is a delicious (and super easy) fall dessert with a wonderful crispy, sweet topping. I may make this again for Thanksgiving.
5 medium apples, cored, peeled and sliced
2 cups fresh cranberries
1 cup granulated sugar
1/4 teaspoon salt
1 tablespoon fresh lemon juice
1/2 tablespoon vanilla extract
topping
1 cup dark brown sugar, lightly packed
1 cup quick cook oats
1/2 cup all purpose flour
6 tablespoons butter, room temperature
Mix apples, cranberries, granulated sugar, salt, lemon juice and vanilla extract and put into a buttered baking dish, set aside.
Mix brown sugar, oats and flour, add butter one tablespoon at a time, mixing with a fork or pastry blender until well distributed and crumbly. Sprinkle topping evenly over the fruit.
Bake for 45 minutes at 325.
