Blueberry Muffins makes 1 dozen (adapted from here)
1 1/2 cups all purpose flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 large egg
1/3 cup + 2 tablespoons buttermilk
1/3 cup vegetable oil
1 teaspoon vanilla
1 1/3 cup fresh blueberries, washed and patted dry
2 tablespoons vanilla sugar (white granulated or turbinado would also work just fine)
Heat oven to 400. Put liners in muffin pan or grease pan.
Combine flour, sugar, salt, and baking powder in a large bowl.
In a small bowl, mix together oil, egg, buttermilk and vanilla. Make well in the center of dry ingredients and pour in the liquid. Mix until just combined (mixture will still have a few lumps, but that's ok). Fold in blueberries.
Fill muffin cups and sprinkle lightly with vanilla sugar. Bake for 20 minutes.
